FWIW, I wrote a Perl script that generates a zsh completion file by parsing
the output of "mpv --list-options", "mpv --ao=help", "mpv --vo=help", etc...

It's run at build time by mpv's build scripts, which means that the generated
file will be shipped with the Debian package.

I think it can be adapted to generate a bash completion script as well, if you
are interested. See [0].
