For such setups (many users, spam filtering, etc) I'd prefer postfix, but... I

Nope. As discussed on IRC we should provide imap(s) and pop3(s) as well. The
machine (and network) can cope with many users and currently we don't even
have 20 accounts :-) Also, if the numbers really raise, I'm sure we'll find
another machine...
I won't (suggest to) start with a webmailclient though.
