Sure.

A good way to step in would  to have a look to the debian science
package list and fix bugs (especially RCs bugs)

(a piece of advice: don't start with atlas or salome ;)

An other way would be to adopt some science packages listed here:
http://www.debian.org/devel/wnpp/rfa_bypackage
http://www.debian.org/devel/wnpp/orphaned
and migrate them into debian science (after some cleanup)
