Why ? Simply because this wine is not cloying and has good underlying acidity, freshness and simply delicious. Giorgio Boeri says the essence is in determining when is the best time to harvest the fruit - at the right balance of sugar and acidity and taking on the fermentation process with lightning speed to prevent oxidation and maintaining maximum freshness. Sounds easy but many Piedmontese producers failed to observe these steps as they focus more time and effort in their other higher value products such as barolo. The vineyards that yielded this particular Barolo lie in the best viticultural zones of the Grinzane Cavour, La Morra, and Castiglione Falletto communes, all in the province of Cuneo. Following a traditional fermentation and maceration, this Barolo matures for 2 years in large oak botti, where it develops the tannins and extractive compounds that will give it superb structure and enable it to age for many years. Garnet-edged rich ruby red. Pleasurable and generous on the nose with evolved bouquet of violets and dried rose petals. Dry on palate, full-bodied and robust. Smooth and harmonious.</td>

I recently had the opportunity to taste several vintages of the Brunello, which was a great opportunity to assess recent vintages as well as glean some insights into how the wine ages. From vintage to vintage the wine showed its characteristic notes of scorched earth and ripe dark fruit. With a few years of bottle age the wines often begin to display attractive, heady white truffle overtones. The house favors cask-aging for its Brunello and the wines are made in a fairly traditional style. The medium- to full-bodied 2001 Brunello di Montalcino is rich, plump, and bursting with flavor, showing subtle, delicately woven notes of earthiness, tobacco, smoke, minerals and plenty of dark cherry fruit supported by firm yet fine tannins. It is sure to improve with a few years of cellaring but it is quite impressive even today. Anticipated maturity: 2011-2021.</td>

A single 48 hectare plot at an altitude of 450-500 metres on the top of hill overlooking the Lucarelli area halfway between Panzano and Volpaia. This plot is managed to a rigorously modern approach, with more than 5,000 plants per hectare producing around one kilogram of fruit per plant. The wine is matured in large 50-hectolitre barrels to give a Chianti Classico of enormous character that is concentrated without being heavy or jammy, even in torrid vintage like 2003. Since 1969, the name of La Selvanella has appeared on this wine that is emblematic for it’s typical style.</td>

While it isn’t quite as fresh as some of the other Brunellos from this part of the zone, its seamless texture and silky tannins make for a beautifully-balanced wine to enjoy now and over the next dozen years or so. Hand harvested and part of the fruit is stored for a short period for drying while the rest goes straight into cold maceration for 48 hours followed by fermentation for about 12 days in vinificators. In November, the dried grapes are added to this wine which, with a second fermentation, is enriched with further polyphenolic and aromatic components and takes on it own unique character. The wine then matures in wooden cash of different size and flavours for about a year and rest in bottle for another 6 months before release into the market. By law “superiore†dictates a higher alcohol content achieved through riper grapes and “classico†means the grapes must be from the original classified zone of Vapolicella in Veneto.</td>
