hm, my bet would be ~ -> _ git tagging translation obscures it...

I don't think you have missed anything, besides this oddity with ~...
may be more recent version have it addressed...

I believe you can force it to use specific tag with e.g.

--git-upstream-branch=release/3.0_beta.20120503.1

to build you the corresponding .orig.tar.gz

alternatively -- if you have this pushed you could set your debian/watch
so it monitors github's tags, and fetches tarball from there
