I built the package without the newly added scripts, and got this:

W: alsa-tools-gui: binary-without-manpage usr/bin/rmedigicontrol
W: alsa-tools-gui: postinst-has-useless-call-to-update-menus
N:
N: The postinst script calls the update-menus program though no file is
N: installed in /etc/menu-methods. Files installed in /usr/share/menu or
N: /usr/lib/menu are now handled with triggers and don't need an explicit
N: update-menus invocation.
N:
N: If the update-menus call was added by debhelper, rebuilding the package
N: with debhelper 7.2.3 or later will fix this problem.
N:
N: Severity: minor, Certainty: certain

So the problem isn't that the packages lack the invocation, but that
they actually have one! I'll revert this change, although I don't know why
it's still generating the scripts although my chroot has debhelper 7.2.5.

I'll look more into this.
