Thanks, I now appreciate what you were asking -- I think :-)

If I change the font in the GNOME Appearance Preferences then if I
restart Evolution I get the new font.  There is no immediate change as
with other applications, I have to stop and restart.  But yes the fonts
used are exactly those specified in the GNOME dialogue even though the
Evolution preferences indicate there should be an override.
