Some folder with a layout as close as possible to the original upstream 
in usr/share/<package-name> seems like a good way to do it.
That allows e.g. symlinking everything into rdependencies with dh_linktree.
I think the layout of the built font-awesome is a folder with:
css/ font/ less/
(please verify I too am not so familiar with the web-stuff common practices)
font could be skipped or filled with symlinks to the proper debian 
locations.
The generated css files should probably also be installed, that avoids 
the need of rdepends to generate them themselves with lessc.
