If the game builds with gcj and the license is DFGL complient there is not 
problem.

Yes, you can:
- write or improve package description, manpages
- Doing patches to fix error on games from the team (gave a look at 
https://nana.rulezlan.org/~goneri/pkg-games/ for a global overview)
- translate .desktop entry in spanish. I suppose you speak spanish ;).

If so, i suggest you to add it to the http://wiki.debian.org/Games/Suggested 
page.

I suggest you to find on http://www.happypenguin.org/ a simple game, easy to 
build (e.g: .configure, make, make install) and with few dependances. Avoid a 
game already packaged ;).
Another place to find package is here 
http://www.debian.org/devel/wnpp/work_needing .
These packages are already in Debian but there maintainers have decided to 
abandon.
