It fixed most of the issue, but I still see the Unicode FFFD character
in some headings, such as in "Chapter\u+fffd1.\u+fffdIntroduction."

Also the copyright symbol in the "first page" and the acute e in Bézier
are replaced with this character, but I haven't investigated whether
it's a bug in Epiphany, or a problem in the HTML code.
