Here are the keyboard settings that made gnome-settings-daemon die:

$ gconftool-2 -R /desktop/gnome/peripherals/keyboard/kbd
 layouts = [gb]
 model =
 overrideSettings = false
 options = [Compose key compose:rwin,grp        grp:alts_toggle]

If I remove the grp option then gnome-settings-daemon no longer dies:

 layouts = [gb]
 model =
 overrideSettings = false
 options = [Compose key compose:rwin]

Attached is the output of the working gnome-settings-daemon.

I never actually set the grp:alts_toggle option in the applet myself. It
seems to be automatically added when changing the keyboard layout
options--as soon as it is set, gnome-settings-daemon dies.
