You'll have to take that up with the GNOME project itself.  The
metapackage gnome-desktop-environment is designed to reflect a core
GNOME desktop as specified by upstream.

Sound Juicer is just as flexible as grip, just create new profiles if
the existing profiles do not cover what you want.  This is documented in
the Sound Juicer manual.
