I do not quite agree here. In the first place, package dependencies
should document the existing relationships between packages.
It also helps me as maintainer of gnome-mount to keep an overview over
who/what is actually using this package (say, I want to upgrade to a new
revision and test depended packages first for compatibility). Having a
meta-package depend on gnome-mount does not give me the necessary
information. It's of course fine, if the gnome-desktop-environment
*also* adds a Recommends on gnome-mount.
In the end, it's gnome-vfs, which uses gnome-mount, and not g-d-e.

Well, the old libtool/pkgconfig debacle. I'll see, how far I can get
with relibtoolizing first.
