Hi,

You need to use alacarte to do anything but trivial changes to the
menu. 

Confusingly enough, GNOME comes with two menus, gmenu-simple-editor from
the gnome-menus package, and alacarte - the "real" menu editor, which is
separate, but a depends on the gnome-desktop-environment package.
