Bug#440686: sound-juicer: Cannot edit individual audio profiles unless the "Edit GNOME Audio Profiles" box is closed.

It took some playing around with it but the workaround is to close the 
"Edit GNOME Audio Profiles" box which then makes the individual profile 
one is working on editable.  This is apparantly a recent bug. I don't 
recall it in previous versions of GNOME.
