G_DISABLE_SINGLE_INCLUDES was never meant to be used for production
builds. You’re going to see this issue with every GNOME library until
they are all updated to 2.24, and there’s absolutely no reason to. The
single includes will stop working in the future, just like the
deprecated functions, but only for GNOME 3. As such, setting such a
macro is bound to cause build failures.
