Nautilus works fine without it, it just won’t browse remote filesystems.
However you generally should use it with gvfs-backends. That’s the
purpose of the Recommends field, and this is why recommended packages
are installed by default.

Nautilus-cd-burner has been deprecated but brasero covers the same
functionality now.
