I have similar problem, that evince needs very long time to start. I
have some nfs volumes mounted with autofs. When I open some files on
that volume with evince, then for example disconnect from network (with
volumes cleanly umounted) and try to start evince, it tries to stat
files on umounted volume what takes a very long time. Deleting
entries from ~/.recently-used coresponding to these files helped.

When I type
$ evince
I want it only to start and when I type
$ evince some_file.pdf
I want it to start and open only some_file.pdf, not waiting for ages for
nfs server which is down.
