Just to clarify that, these are two different issues.
The drop down box let's you select when the screen turns off, not when
it is dimmed. It is named "Turn off after", for a reason :-)

There is actually no GUI to set the idle-dim-time.
You can only disable dim-on-idle completely via the checkbox "Dim screen
to save power".

But as already said, I agree that 10 secs is a too agressive default
value, and I think by setting it to dim after 1 min would be a good
compromise and sufficient to address this bug report.
