So you created a custom keyboard shortcut (in gnome-control-center)
which runs xrandr when pressing Fn+F7?
If not, how is this keyboard shortcut configured/setup/triggered?

I don't think this is solveable within gnome-settings-daemon if you
simply run xrandr from a keyboard shortcut.
I'd suggest running a shell script instead which does the necessary
sanity check.
Or even better, complain to NVIDIA to properly support xrandr.
