I'm still on 3.36.0-1. I'll try again when -2 hits testing.

Interestingly, from gedit, the preview was displayed with no problem.
However, I just tried a couple of PDFs in evince, and the preview was
not shown, just the attached error.

The commandline also shows the following:

(evince:3126): Gtk-WARNING **: 13:37:55.796: Error launching preview:
Failed to execute child process “/bin/sh” (Permission denied)

GIMP and eog have the same problem:

** (evince:3630): WARNING **: 13:45:59.324: Error launching previewer:
Failed to execute child process “/bin/sh” (Permission denied)

but don't show the error in the GUI.

Notice the slight difference in error message - preview/previewer
