It would be helpful to provide hdf5-mpi.pc which links to the default
mpi for the architecture, whether openmpi or mpich.

That would make it easier to build an application against hdf5-mpi,
using "pkg-config --cflags hdf5-mpi", in the case when the hdf5.pc
altnerative is set to hdf5-serial.pc, without having to worry about
whether the mpi is openmpi or mpich.
