When commenting by hand the graphics setting entires from grub.cfg, the machine starts booting again. I would expect saying GRUB_TERMINAL=console in the configuration file would have the same effect. So, something has changed very recently in the grub graphical options that atleast make the fit-pc2i hang at boot.
