You can set a custom background image by putting a line like this
into /etc/default/grub:

	GRUB_BACKGROUND="/path/to/my/file.png"

Alternatively you can simply copy your image to /boot/grub/. Please
don't forget to run update-grub afterward (in both cases).

Does that fix your problem?
