The alsamixer plugin from GStreamer has an erratic behaviour. When
trying to adjust the volume level it often changes its value randomly,
making it almost unusable.
This can be reproduced with the GNOME Panel's volume slider, but the
underlying problem seems to be in GStreamer.
This bug has been reported upstream and is caused by a race condition:

The patch included in comment #38 fixes the problem for me (tested
against 0.10.19-2):
