Fair point. I'm now in contact with the authors to try and find a
solution. One option they've suggested might be OK is to change from:

"In accordance with Section 7(b) of the GNU Affero General Public
License, you must retain the producer line in every PDF that is created
or manipulated using iText."

to something like:

"In accordance with Section 7(b) of the GNU Affero General Public
License, you we ask that you retain the producer line in every PDF that
is created or manipulated using iText."


It's not entirely clear to me that this is a valid term under section
7(b) of the AGPL, and my suggestion is to go down the route of 12(g) of
http://people.debian.org/~bap/dfsg-faq.html and then if they wish have
an "additional term" in accordance with section 7(b) of the AGPL that
requires their note be kept along with the license.

What do people think about these options?
