libav and FFmpeg: switch over

I think we are not required to fix packages which are already broken
for reasons not related for the transition but regarding the others
let's rock! :-)

I'm OK with that, but if upstream/some other maintainers would like to
keep it in the archive I'd prefer keeping it in unstable and renaming
the binary packages.
