We could use Breaks/Replaces: nvidia-cg-toolkit (<< ${source:Version})
That should cover also some future versions from unclear sources.
In the worst case we could add an epoch and Breaks: n-c-t (<< 1:0) and
leave the non-epoch versions to Nvidia and friends.
