There are limits to automatic configuration. If you install redmine-pgsql and configure redmine to use postgres,
you are supposed to know what postgres is, and how to make sure you have a running postgres server somewhere.
Since it seems to not be your case, you'd better install
redmine-sqlite and configure it with sqlite database. It is simpler and doesn't require any other installation/configuration.

  New

Bug description:
  Installing "redmine" 1.0.5 on Ubuntu 11.04 (Natty), using PostgreSQL
  for a database, fails.  The problem is that user "postgres" is
  referenced by the installation, and this user is missing.

  If I install package "postgresql" first, it seems that the user
  "postgres" gets created.  Then "redmine" installation succeeds.  The
  package "redmine-pgsql" depends on "postgresql-client".  Maybe it
  should clearly depend on "postgresql" as well?   Currently,
  "postgresql" is suggested, but this is not strong enough to get the
  "postgres" user created automatically.
