Hello Kilian,
Italian sounds are available at this address:
ftp://213.156.62.146/pub/linux/asterisk/sounds/it/

And it's only a matter of copying the sound files to the correct
locations, particular these are the correct locations of all files of
the above archive:
- all files in digits/ must be put
in /usr/share/asterisk/sounds/digits/it/
- all files in phonetic/ must be put
in /usr/share/asterisk/sounds/phonetic/it/
- all files in letters/ must be put
in /usr/share/asterisk/sounds/letters/it/
- all other files (in the root of the archive) must go
in /usr/share/asterisk/sounds/it/

If you want to provide such a debianized package too that would be
*greatly* welcome :-D
