Actually, this is already available, but the documentation is obscure
and provided only for linphonecsh:

linphonecsh <action> [arguments]

        soundcard       : can be 'soundcard capture', 'soundcard playback', 'soundcard ring',
                         followed by an optional number representing the index of the soundcard,
                         in which case the soundcard is set instead of just read.

[...]
linphonec> soundcard list
0: ALSA: default device
1: ALSA: HDA Intel
2: PulseAudio: default

linphonec> soundcard show

Using capture sound device PulseAudio: default

So the bug is the fact that this option is undocumented in linphonec
help and also in upstream documentation [1], title updated ;-)
