So actually you do have a $DEFAULT_DISPLAY_MANAGER_FILE (/etc/X11/default-
display-manager) but the file content is empty so cat returns nothing. Can you
double check that?

You definitely have an issue here because the file content should have been
set just above in the postinst file. Can you try to add set -x and retry?
