The problem is that:

/usr/bin/make -C doc all
make[1]: Entering directory `/«PKGBUILDDIR»/doc'

and it keeps going and going until it crashes, and no doc is
generated. It's probably related to the recent updated of
texlive-binaries to a new upstream release.
