Strange. When I install sane-backends.pkg and SANE-Preference-Pane.pkg  
from
http://www.ellert.se/twain-sane/

xerox_mfp is the very last item listed in the Drivers tab of the SANE  
preference pane.

Perhaps try Mattias Ellert’s packages instead of Xerox’s?
