Like with any other packaged software, you reached the point where you
have to choose the blue pill (stick to the Stable release) or the red
pill (going unofficial way).

For the unofficial way, I suggest simply rebuilding the package, like:

apt-get install build-essential
apt-get build-dep apt-cacher-ng
apt-get -b source apt-cacher-ng 
(you need to add appropriate deb-src line to sources.list)
