I think I have the same problem: the applet doesn't find any device. The reason is simple: I use alsa without oss-compat. The rest of the desktop can cope with it because it uses gstreamer, but that applet is compiled with --disable-gstreamer. Solution: make it use gstreamer, like the rest of gnome...
