Thanks for the pointer, I will do an upload to unstable to fix that.
Let’s keep this bug open for that.

Try this:
$ gsettings set org.gnome.gnome-flashback sound-applet false

Yes, the icon from GNOME 2.x is in gnome-flashback, not gnome-applets.
