There is no vim-gnome package installed. Nor any other package from [1].

Maybe it has something to do with that. In
/usr/share/applications/mimecache.info there are many lines like
"text/x-c=vim.desktop" while
gedit only appears for text/plain . Still I don't know what to do about it.

No, there is no gvim-providing package installed.
